Well, you can take Cham Charm restaurant in Hochiminh - which tries to take some elements and make it look like the traditional asian high class house.

ATMOSPHERE - THE ART OF LIFE
The kingdom of Champa was an important phase in the political and cultural history of South-East Asia from the 2nd-12th centuries. Brand new in Hoian, the 5,000 sqm Cham Charm Restaurant is making a name for itself by devoting to ancient arts, cuisine and culture.
Build on the concept of “preserving the traditional Champa Culture”, Cham Charm is almost a mini-museum of artifacts and sculptural works of this historic and culturally rich period in its impressive decor, creating an ambiance with historic meaning.
Inside, however, you’ll find gorgeous paintings and hangings done in colours hang on the walls, and many sculpture works depicting soldiers, dancers, dances and gods presenting Champa culture are placed with care around the reataurant. Interestingly, the restaurant itself is a special place you’d be hard pressed to find such thing anywhere else in the country. Gazing out the windows onto the river below, you’ll be astounded all over again at the scenery here.
Upstairs, the wide open-terrace accommodates plenty of tables with ease, and offering a breath of fresh air with a view overlooks the picturesque river. At night, you will find another beauty of illuminated river with night-fishing junks, sightseeing boats…crossing now and then...



Only thing:
They are serving not traditional food or drinks but western food in an asian atmosphere. Interesting!
Audience is quite a mix btw high-class Vietnamese and some expats. 






Here come another concept - Ngon restaurant
Serving Vietnamese traditional food from Northern, Central, and Southern Vietnam
Reasonable price, quite a range of dishes. Not the best quality but in terms of convenience and choices, i have to agree that this is the right choice
Audience: well, quite a mix btw Vietnamese and foreigners. Most visitors will come here and try the dish, at least once.
